Am concerned a little about security

well, talking about security, hard luggage offers about the same security grade... you can easily break it open with a screwdriver.
So never left unattended a full loaded bike, in any case... hard luggage is great because it's easy to fit, water resistant, less dangerous (sometimes you hear of someone's soft luggage strings being caught in the rear wheel... or the bags molten on the exhaust).

Just be careful with shorter slip-on exhausts and how close and angled they are with respect to the bottom of the pannier:



A simple and cheap solution is to put an extension piece of metal (approx 40mm) on the exhaust mounting bracket to push it down lower:
